simple you cant do with your watch or you can use your iphone also to do this. if you want to change your layers and app layout simple go to apple watch app select app view and then you can change it from there if you have grid already selected you'll see the arrangement down below and then you can move the apps around simple hold the app you want to move and drag it to the somewhere else.
